Carrot Cake Verrines

Craving a carrot cake but don't necessarily have the time to cook it? Opt for these gourmet verrines made with nuts and dates and topped with a smooth mixture of cream cheese and creamy honey!

Freeze for three months.

  • Ingredients

    Icing:

    • 1 cup cream cheese, at room temperature
    • ¼ cup creamed honey
    • ¼ tsp cinnamon

    Cake:

    • 1 cup slivered almonds
    • 1 cup walnuts
    • 1 cup dried dates
    • 2 cups grated carrots
    • ½ tsp nutmeg
    • 1 tsp vanilla
  • Preparation

    For the icing:

    1. Using a mixer, mix together cheese, honey and cinnamon until smooth. Set aside.

    For the cake:

    1. Place the almonds and walnuts in a food processor and grind into coarse flour.
    2. Add the remaining ingredients to the food processor and mix until a dough forms.
    3. Place half of the cake mixture in 10 glasses.
    4. Add half of the frosting.
    5. Top with another layer of cake and finish with a layer of frosting.
    6. Add a walnut on top for decoration.
