
Carrot Cake Verrines
Craving a carrot cake but don't necessarily have the time to cook it? Opt for these gourmet verrines made with nuts and dates and topped with a smooth mixture of cream cheese and creamy honey!

Ingredients
Icing:
- 1 cup cream cheese, at room temperature
- ¼ cup creamed honey
- ¼ tsp cinnamon
Cake:
- 1 cup slivered almonds
- 1 cup walnuts
- 1 cup dried dates
- 2 cups grated carrots
- ½ tsp nutmeg
- 1 tsp vanilla

Preparation
For the icing:
- Using a mixer, mix together cheese, honey and cinnamon until smooth. Set aside.
For the cake:
- Place the almonds and walnuts in a food processor and grind into coarse flour.
- Add the remaining ingredients to the food processor and mix until a dough forms.
- Place half of the cake mixture in 10 glasses.
- Add half of the frosting.
- Top with another layer of cake and finish with a layer of frosting.
- Add a walnut on top for decoration.
