Beef Taquitos for Lunchbox

A crispy Mexican lunch! Rolled tortillas filled with seasoned beef, baked until golden, then served with fresh and colorful sides.

  • Ingredients

    • 8 medium-sized tortillas
    • 2 cups cooked ground beef or cooked beef strips
    • 1 cup shredded cheese (Tex-Mex blend)
    • ½ cup onion, finely chopped
    • 2 tbsp taco seasoning
    • 2 tbsp olive oil
    • 1 cup salsa
    • 2 cups tortilla chips
    • 2 limes
    • ½ cup fresh cilantro
  • Preparation

    1. Preheat oven to 425°F (220°C).
    2. Combine ground beef with taco seasoning and onion.
    3. Divide beef mixture evenly among tortillas.
    4. Sprinkle with shredded cheese.
    5. Roll tortillas up tightly and place on a baking sheet.
    6. Brush each rolled tortilla with olive oil.
    7. Bake for 12-15 minutes until golden brown and crispy.
    8. Let cool before cutting in half.
    9. Place taquitos in the main compartment of the containers.
    10. Add tortilla chips to a separate compartment.
    11. Place salsa in small airtight containers.
    12. Garnish with lime wedges and fresh cilantro.

Notes and tips

Taquitos are best eaten cold or at room temperature.
Prepare a large quantity of seasoned beef for several meals.
For a lighter version, use shredded chicken instead of beef.
Add guacamole or sour cream for extra flavor.
Keeps for 2 days in the refrigerator.
