Merguez sausage tacos

Merguez sausages, leftover vegetables, a little onion, guacamole and grated mozzarella, that's all it takes to make these tasty tacos! Even your kids can participate!

  • Ingredients

    • 450g merguez sausages, flesh only
    • 2 cups leftover cooked vegetables
    • 12 hard or soft taco shells
    • ¼ cup chopped yellow onion
    • 1 cup shredded mozzarella
    • 1 cup guacamole
  • Preparation

    1. In a large skillet over medium-high heat, cook sausage meat for 5 minutes or until cooked through. Add cooked vegetables and cook for another 2 minutes.
    2. Fill taco shells with cooked sausage, vegetables, red onion and shredded cheese.
    3. Serve with guacamole.
