
Merguez sausage tacos
Merguez sausages, leftover vegetables, a little onion, guacamole and grated mozzarella, that's all it takes to make these tasty tacos! Even your kids can participate!

Ingredients
- 450g merguez sausages, flesh only
- 2 cups leftover cooked vegetables
- 12 hard or soft taco shells
- ¼ cup chopped yellow onion
- 1 cup shredded mozzarella
- 1 cup guacamole

Preparation
- In a large skillet over medium-high heat, cook sausage meat for 5 minutes or until cooked through. Add cooked vegetables and cook for another 2 minutes.
- Fill taco shells with cooked sausage, vegetables, red onion and shredded cheese.
- Serve with guacamole.
