  • Ingredients

    • 2 tbsp olive oil
    • 1 cup grated or diced carrots
    • ½ cup celery, finely diced
    • ½ cup chopped yellow onion
    • 8 cups chicken broth
    • ¾ cup soup noodles
    • 1½ cups cooked chicken, cubed
    • 1 tbsp dried oregano
    • 1 tbsp dried chives
  • Preparation

    1. In a large saucepan, heat the oil and cook the vegetables for 5 minutes.
    2. Add remaining ingredients and simmer, uncovered, for 10 minutes or until all ingredients are tender.
