Ingredients
- 2 tbsp olive oil
- 1 cup grated or diced carrots
- ½ cup celery, finely diced
- ½ cup chopped yellow onion
- 8 cups chicken broth
- ¾ cup soup noodles
- 1½ cups cooked chicken, cubed
- 1 tbsp dried oregano
- 1 tbsp dried chives

Preparation
- In a large saucepan, heat the oil and cook the vegetables for 5 minutes.
- Add remaining ingredients and simmer, uncovered, for 10 minutes or until all ingredients are tender.
