Squash Rösti with Italian Sausage

Serve as a starter or as a meal, these röstis made with butternut squash, Italian sausage and red onions, served with a mayonnaise sauce garnished with basil and lemon, will certainly please children and adults alike!

Freezes for three months (except seasoned mayo)

  • Ingredients

    • 1 cup finely grated butternut squash
    • 1 large Yukon Gold potato, peeled and finely grated
    • The flesh of 4 mild Italian sausages
    • ¼ cup finely chopped red onions
    • 2 tbsp honey
    • Salt and pepper from the mill
    • A little butter for cooking

    For the seasoned mayo:

    • 1 cup mayonnaise
    • 2 tbsp fresh basil, chopped
    • The zest of one lemon and a little of its juice to taste
    • Salt and pepper from the mill
  • Preparation

    For the röstis:

    1. Drain the grated potatoes in a clean cloth.
    2. In a bowl, combine squash, potato, sausage meat, onions, honey, salt and pepper; shape into small flat patties, about 2 tbsp.
    3. In a frying pan, heat a small amount of butter then brown the röstis for 3 to 4 minutes on each side.

    For the seasoned mayo:

    1. In a bowl, mix all the ingredients and serve with the röstis.
