Chicken Quesadillas for the Lunch Box
A comforting version of quesadillas, practical and nourishing, with its generous filling of chicken and melted cheese.

Ingredients
- 8 flour tortillas
- 2 cups cooked, shredded chicken
- 2 cups shredded Tex-Mex cheese
- 1 cup salsa
- 1/2 cup sour cream
- 1/2 cup guacamole
- 2 peppers, cut into strips
- Vegetable oil
- Salt and pepper to taste

Preparation
-Fill a tortilla with chicken and cheese
-Close with a second tortilla
-Grill in an oiled pan until browned
-Leave to cool on a rack
-Cut into points
-Distribute into containers
-Prepare the condiment portions
-Arrange the pepper strips
