Poutine of chicken fingers and green beans

  • Ingredients

    • For the chicken fries:
    • 1 ½ lbs chicken breast, cut into strips
    • ¼ cup flour
    • 2 beaten eggs
    • 1 cup panko breadcrumbs
    • ¼ tsp salt
    • ¼ tsp pepper
    • ¼ cup olive oil
    • ½ lb green beans
    • 200g cheese curds
    • For the brown sauce:
    • 3 tbsp butter
    • 2 tbsp flour
    • 1 tbsp onion powder
    • 1 cup concentrated beef broth
  • Preparation

    1. Preheat oven to 300F.
    2. In a plate, mix the breadcrumbs with the salt and pepper.
    3. Dip the chicken strips in the flour, in the beaten eggs, then coat them in breadcrumbs. Set aside.
    4. In a large skillet over medium-high heat, heat the oil over medium-high heat and cook the chicken strips for 10 minutes, turning regularly, or until the meat is cooked through.
    5. Spread the chicken strips on a baking sheet and place in the oven.
    6. In a large pot of boiling water, blanch the beans for 1 minute. Drain well and set aside in the oven with the chicken fries.
    7. In a nonstick saucepan over medium heat, heat butter, then add flour and onion powder, stirring constantly. Cook for 1 minute or until golden brown. Add broth and simmer for 1 minute.
    8. In bowls, place the chicken alternating with the beans, add the cheese and cover with sauce.
