Chicken breasts and carrots with honey

  • Ingredients

    Chicken :

    • 75 ml (5 tbsp) olive oil
    • 450g (1 lb) chicken breasts
    • 15 ml (1 tbsp) smoked paprika

    Carrots:

    • 2 large carrots (2 cups/500 ml) cut into small ½ cm x ½ cm cubes
    • 45 ml (3 tbsp) honey
    • Salt and pepper from the mill
  • Preparation

    1. Preheat oven to 400F.
    2. In an ovenproof skillet, heat 30 ml (2 tbsp) of olive oil and brown the chicken breasts on both sides for 2 minutes. Add salt, pepper and smoked paprika. Cover and place in the oven for 40 minutes or until the breasts are cooked. Set aside.
    3. Place the diced carrots in a bowl, drizzle with 45 ml (3 tbsp) of olive oil, add the honey, salt and pepper. Mix well.
    4. Place on a baking sheet lined with parchment paper and bake for 45 minutes or until the carrot cubes are tender. Serve with the chicken breasts.

Add 15 ml (1 tbsp) of fresh rosemary to the diced carrots before cooking.
