Pita pizzas for the lunchbox

A quick and tasty solution for an impromptu lunch! Crispy toasts transformed into mini-pizzas that can be eaten cold or hot.

  • Ingredients

    • 8 slices of sandwich bread
    • 1 cup tomato or pizza sauce
    • 2 cups shredded cheese (mozzarella, cheddar)
    • Toppings of choice: ham, pepperoni, mushrooms, bell peppers
    • 1 tsp dried oregano
    • 1 tsp dried basil
    • 2 tbsp olive oil
  • Preparation

    1. Preheat oven to 425°F (220°C) or use a toaster oven.
    2. Lightly brush bread slices with olive oil.
    3. Spread one tablespoon of sauce on each slice.
    4. Add chosen toppings over the sauce.
    5. Sprinkle generously with grated cheese.
    6. Sprinkle with dried herbs.
    7. Bake until cheese is melted and golden brown.
    8. Let cool before cutting into triangles.
    9. Place pizza triangles in airtight containers.

Notes and tips

Use slightly stale bread for a firmer base.
Prepare the day before and reheat in the microwave if desired.
Ideal for using up refrigerator leftovers as toppings.
For a no-oven version, use a toaster, then add toppings and microwave.
