Pita pizzas for the lunchbox
A quick and tasty solution for an impromptu lunch! Crispy toasts transformed into mini-pizzas that can be eaten cold or hot.

Ingredients
- 8 slices of sandwich bread
- 1 cup tomato or pizza sauce
- 2 cups shredded cheese (mozzarella, cheddar)
- Toppings of choice: ham, pepperoni, mushrooms, bell peppers
- 1 tsp dried oregano
- 1 tsp dried basil
- 2 tbsp olive oil

Preparation
- Preheat oven to 425°F (220°C) or use a toaster oven.
- Lightly brush bread slices with olive oil.
- Spread one tablespoon of sauce on each slice.
- Add chosen toppings over the sauce.
- Sprinkle generously with grated cheese.
- Sprinkle with dried herbs.
- Bake until cheese is melted and golden brown.
- Let cool before cutting into triangles.
- Place pizza triangles in airtight containers.
