Pizza frittata

  • Ingredients

    • 8 beaten eggs
    • 125 ml (1/2 cup) 15% cooking cream
    • 30 ml (2 tbsp) Dijon mustard
    • Salt and pepper from the mill
    • 500 ml (2 cups) Tex-Mex shredded cheese
    • 1 chopped green onion
    • 1/2 red pepper, finely chopped
    • 1/2 green pepper, finely chopped
    • 250 ml (1 cup) pizza sauce
    • 250 g (9 oz) sliced ​​pepperoni (or other cold cuts of your choice)
  • Preparation

    1. Preheat oven to 375 degrees F.
    2. In a bowl, beat together eggs, cream, mustard, salt and pepper. Add 250 ml (1 cup) of grated Tex-Mex cheese and chopped green onion. Mix well.
    3. Pour into a non-stick or parchment paper lined rectangular baking pan. Top with red and green pepper and bake for 20 minutes.
    4. Add the pizza sauce, pepperoni and remaining grated cheese and continue cooking in the oven for 10 minutes.
