Pizza frittata
Ingredients
- 8 beaten eggs
- 125 ml (1/2 cup) 15% cooking cream
- 30 ml (2 tbsp.) Dijon mustard
- Salt and pepper from the mill
- 500 ml (2 cups) grated Tex-Mex cheese
- 1 chopped green onion
- 1/2 finely chopped red pepper
- 1/2 finely chopped green pepper
- 250 ml (1 cup) pizza sauce
- 250 g (9 oz) sliced pepperoni (or other cold cuts of your choice)
Path to follow
- Preheat the oven to 375 degrees F.
- In a bowl, beat the eggs, cream, mustard, salt and pepper. Add 250 ml (1 cup) of grated Tex-Mex cheese and the chopped green onion. Mix well.
- Pour into a rectangular non-stick baking pan or one lined with parchment paper. Garnish with red and green pepper and bake for 20 minutes.
- Add the pizza sauce, pepperoni and the rest of the grated cheese and continue cooking in the oven for 10 minutes.

When ready to serve, garnish with:
- A few rocket leaves
- Sour cream
