
Fruit Snack Bread
A dessert bread that can be prepared in just 15 minutes, perfect for using up your stale fruit and which will fit very well into the children's lunch box!

Ingredients
- 1½ cups (375 ml) all-purpose flour
- 2 tbsp (30 ml) ground flax seeds
- ½ tsp (3 ml) baking powder
- 1 pinch of salt
- ½ tsp (3 ml) ground cinnamon
- ¼ cup (60 ml) canola oil
- ¾ cup (175 ml) lightly packed brown sugar
- ½ tsp (3 ml) vanilla essence
- 2 eggs
- 1½ cups (375 ml) assorted fruit (use your own slightly stale fruit)

Preparation
- Preheat oven to 375°F.
- Butter a 9 x 5-inch (23 x 13 cm) loaf pan and line it with a strip of parchment paper, leaving it hanging over two sides.
- In a bowl, mix together flour, ground flax seeds, baking powder, salt and cinnamon. Set aside.
- In another bowl, using an electric mixer, beat the oil with the brown sugar and vanilla until smooth. Add the eggs, and mix again.
- Add the dry ingredients.
- Using a wooden spoon, stir in the fruit.
- Place the mixture in the buttered bread pan.
- Bake for about 45 minutes or until a toothpick inserted in the center of the dough comes out clean.
- Let cool completely on a wire rack before unmolding and slicing.

Notes and tips
Add 1 tbsp. (15 ml) grated fresh ginger along with the fruit.
