Oat and raisin bread

Freeze for three months.

  • Ingredients

    • 60 ml (¼ cup) butter, at room temperature
    • 180 ml (¾ cup) brown sugar
    • 2 eggs
    • 125 m (½ cup) water
    • 375 ml (1½ cups) all-purpose flour
    • 125 ml (½ cup) oatmeal
    • 5 ml (1 tsp) baking powder
    • 1 ml (¼ tsp) baking soda
    • 125 ml (½ cup) raisins
    • Your favorite dessert spices (nutmeg, cinnamon, cardamom, etc.)
  • Preparation

    1. Preheat oven to 375F.
    2. In a bowl, using an electric mixer, cream the butter and brown sugar. Add the eggs and water and mix well.
    3. In another bowl, mix the dry ingredients.
    4. Add dry ingredients to wet mixture; add water if necessary.
    5. Spoon the mixture into a nonstick loaf pan and bake for 40 minutes or until a toothpick inserted in the center of the loaf comes out clean.
