  • Ingredients

    • 1 cup (250 ml) all-purpose flour
    • 1 tbsp (15 ml) baking powder
    • 1 tsp (5 ml) baking soda
    • 3 eggs
    • ¼ cup (60 ml) olive oil
    • 2 tbsp (30 ml) milk (or more to adjust texture)
    • ½ cup (125 ml) shredded mozzarella cheese
    • ¼ cup (60 ml) finely chopped pepperoni
    • ¼ cup (60 ml) finely chopped green or red pepper
  • Preparation

    1. Preheat oven to 375°F.
    2. In a bowl, mix the flour, baking powder and baking soda. In another bowl, mix the eggs, olive oil and milk.
    3. Add the dry mixture to the liquid mixture. Add the remaining ingredients.
    4. Place this mixture in oiled muffin molds and bake for 25 minutes.
