Freeze for three months.

  • Ingredients

    • 1 egg, beaten
    • ¼ cup canola oil
    • ½ cup milk
    • 2 cups all-purpose flour
    • 1 cup quick-cooking oatmeal
    • 1 tbsp baking powder
    • 1 tsp baking soda
    • 1 cup brown sugar
    • ½ cup shredded coconut, sweetened
    • ½ cup dried cranberries
  • Preparation

    1. Preheat oven to 375°F. Oil a muffin pan or use muffin liners.
    2. In a large bowl, mix together the egg, canola oil and milk.
    3. In another bowl, mix all the other ingredients.
    4. Add the dry ingredients to the wet ingredients.
    5. Pour the mixture into the molds.
    6. Bake for 15 to 20 minutes or until a toothpick inserted in the center of a muffin comes out clean.
