Ingredients
- 1 egg, beaten
- ¼ cup canola oil
- ½ cup milk
- 2 cups all-purpose flour
- 1 cup quick-cooking oatmeal
- 1 tbsp baking powder
- 1 tsp baking soda
- 1 cup brown sugar
- ½ cup shredded coconut, sweetened
- ½ cup dried cranberries

Preparation
- Preheat oven to 375°F. Oil a muffin pan or use muffin liners.
- In a large bowl, mix together the egg, canola oil and milk.
- In another bowl, mix all the other ingredients.
- Add the dry ingredients to the wet ingredients.
- Pour the mixture into the molds.
- Bake for 15 to 20 minutes or until a toothpick inserted in the center of a muffin comes out clean.
