
Yogurt, mango and coconut muffins
Add a touch of exoticism to your traditional muffins with this tasty recipe that combines spelt flakes, mango and coconut to perfection!

Ingredients
- 1½ cups all-purpose flour
- 1 cup spelt flakes
- 1 cup sugar
- 1 tbsp baking powder
- ¼ tsp salt
- 1 cup coconut yogurt
- ½ cup melted coconut oil
- 2 eggs
- 1 cup fresh mango, finely diced
- ½ cup unsweetened shredded coconut

Preparation
- Preheat oven to 375°F.
- In a bowl, mix the flour, oats, sweetener, baking powder and salt.
- In another bowl, mix together wet ingredients except fruit and pepitas/nuts. Pour over flour mixture.
- Using a wooden spoon, mix gently until combined.
- Add fruit and pepitas/nuts, then mix again.
- Pour into non-stick muffin tins and place in the center of the oven.
- Bake for 30 minutes or until a toothpick inserted in the center of a muffin comes out clean.
- Feel free to add a little liquid if the mixture is too dry or flour if the mixture is too wet.
