Mini meatloaves

Make these mini meatloaves in individual portions ahead of time and freeze them so you can have a ready-to-pack lunch on hand or a tasty and nutritious dinner to serve in just minutes!

Freeze for three months.

  • Ingredients

    • 450g ground beef
    • 2 cloves garlic, chopped
    • 1 yellow onion, finely chopped
    • 1 stick of celery, finely chopped
    • ½ cup grated carrots
    • 2 eggs
    • 1 cup oatmeal
    • ½ cup tomato sauce
    • Salt and pepper to taste
  • Preparation

    1. Preheat oven to 375F.
    2. In a large bowl, mix all ingredients except tomato sauce.
    3. Spoon the mixture into 12 non-stick muffin cups, top with tomato sauce and bake for 20 minutes or until the center of each mini loaf is cooked through.
