Sweet pancakes with vegetables

Are you trying in vain to get your children to eat vegetables? Try these patties, they will be amazed! Made with a mixture of grated carrots and zucchini, oatmeal, cocoa powder and dark chocolate chips, they are perfect for breakfast or a snack!

    • Ingredients

      • 1 1/2 cups whole wheat or all-purpose flour
      • 1 cup of rolled oats
      • 1/4 cup cocoa powder
      • 1 tbsp baking powder
      • 1 pinch of salt
      • 3/4 cup butter, softened
      • 1 cup brown sugar
      • 2 eggs
      • 1/2 cup cream or milk
      • 1 tsp vanilla essence
      • 1/2 cup grated carrots
      • 1 cup grated zucchini
      • 1 cup dark or white chocolate chips
    • Preparation

      1. Preheat oven to 375 degrees F.
      2. In a bowl, combine flour, oatmeal, cocoa powder, baking powder and salt.
      3. In another bowl, beat the butter and brown sugar for 1 minute. Add the eggs, milk (or cream) and vanilla and mix well.
      4. Add the dry mixture to the wet mixture.
      5. Add carrot, zucchini and chocolate chips. Mix well.
      6. Using a spoon, divide 3 tablespoons (a golf ball) of mixture per patty onto two nonstick baking sheets. Leave at least 3 cm between each patty.
      7. Flatten slightly with a fork.
      8. Bake for 20 minutes or until a toothpick inserted in the center of a pancake comes out clean.
