Rib-Style Pork Tenderloin and Vegetable Fries
Ingredients
Vegetable fries
- 2 medium sweet potatoes, peeled and cut into thin matchsticks
- 1 small turnip cut into thin sticks
- 3 tbsp. olive oil
- 1 C. onion powder
- Salt and pepper from the mill
- 1 1/2 lb pork tenderloin
- 2 tbsp. olive oil
- Salt and pepper from the mill
- 2 t. rib sauce
Path to follow
- Preheat the oven to 400°F.
- In a bowl, mix the vegetables with 3 tbsp. tablespoon olive oil, onion powder, salt and pepper. Place on a baking sheet lined with parchment paper and bake for 45 minutes or until the vegetables are tender.
- In an ovenproof skillet (with lid), over medium-high heat, heat the oil and sauté the pork tenderloin on all sides for 5 minutes. Season with salt and pepper and drizzle with sauce.
- Cover and place in the oven for 30 minutes or until the center of the pork tenderloin is slightly pink. Serve with vegetable fries.

Sour cream to serve with fries.
