Grilled Fajitas

Try a new take on traditional fajitas with this grilled version, combining chicken breasts, red bell pepper, red onion and cheddar cheese. Serve with salsa for even more flavor!

  • Ingredients

    • 450g (1 lb) chicken breast, cut into strips
    • 5 tbsp olive oil
    • 1 red pepper, cut into strips
    • 1 small red onion, chopped
    • 2 tbsp fajita seasoning
    • 4 large tortillas
    • 1 cup shredded cheddar cheese
    • 1 cup salsa
  • Preparation

    1. In a large skillet over medium heat, heat 2 tablespoons of olive oil and cook the chicken for 5 minutes, stirring regularly.
    2. Add vegetables and seasoning. Continue cooking for 5 minutes.
    3. Top each tortilla with cheese and the chicken and vegetable mixture.
    4. Fold to form a roll.
    5. In a large skillet over medium-high heat, heat 3 tablespoons olive oil and add tortillas. Cook for 2 minutes on each side or until golden brown and crispy.
