Fruit and vegetable compote
Ingredients
- 6 cups (1500 ml) diced fruit (use lousy or frozen fruit: apples, mangoes, berries, etc.)
- 1 large grated carrot
- 1 large grated zucchini
- 2 tbsp. (30 ml) maple syrup
- ½ tsp. 1/2 tsp (3 mL) nutmeg
Preparation
- Place all the ingredients in a large pot and simmer over medium-low heat, uncovered, until the fruits and vegetables are cooked through and the liquid becomes syrupy. Stir regularly.
- Place in food processor until smooth.
- Cool completely and place in reusable mess-free pouches.
For adventurers:
Add ½ cup (125 ml) ground almonds when puréeing.
