Cake with apples
Ingredients
- 375 ml (1½ cups) all-purpose flour
- 2.5 ml (½ tsp) baking powder
- 1 pinch of salt
- 2.5 ml (½ tsp) ground cinnamon
- 60 ml (¼ cup) canola oil
- 180 ml (¾ cup) lightly packed brown sugar
- 2.5 ml (½ tsp) vanilla essence
- 2 eggs
- 2 small apples, peeled and cut into small ½ cm x ½ cm dice
Path to follow
- Preheat the oven to 375F.
- Butter a 23 x 13 cm (9 x 5 in) loaf pan and line it with a strip of parchment paper, letting it hang over two sides.
- In a bowl, combine the flour, baking powder, salt and cinnamon. To book.
- In another bowl, using an electric mixer, whisk the oil with the brown sugar and vanilla until the mixture is smooth. Add the eggs, and mix again.
- Stir in the dry ingredients.
- Using a wooden spoon, stir in the diced apples.
- Pour the mixture into the buttered bread pan.
- Bake for about 40 minutes or until a toothpick inserted in the center of the dough comes out clean.
- Let cool completely on a wire rack before unmolding and slicing.
For adventurers
Add 2.5 ml (1/2 teaspoon) ground ginger along with the cinnamon.
