Strawberry and feta bruschetta

Ingredients
- 1 baguette, cut into 1cm thick slices
- 60 ml (¼ cup) + 30 ml (2 tbsp) olive oil
- 500 ml (2 cups) chopped fresh strawberries
- 125 ml (½ cup) coarsely crumbled feta
- ½ small red onion finely chopped
- 2 celery stalks chopped
- 125 ml (½ cup) chopped walnuts
- 30 ml (2 tbsp.) chopped fresh mint
- Salt and ground pepper to taste
Path to follow
- Preheat the oven to 400F.
- Cut the baguette into slices 1 cm thick. Place on a non-stick baking sheet and brush both sides with olive oil. Pepper to taste.
- Place in the oven for 20 minutes or until the croutons are lightly browned. To book. In a large bowl, combine all other ingredients and serve over croutons.

Add a cup of arugula and drizzle with balsamic caramel just before serving.
