
Beef - vegetables - croutons
Simply combine ground beef, diced tomatoes and frozen peas, top with croutons and you have a dish that's ready in just a few minutes and is as tasty as you want!

Ingredients
- 4 tbsp (60 ml) olive oil
- 450 g (1 lb) lean ground beef
- 1 small red onion, chopped
- 1 large can diced tomatoes, drained
- 1 cup (250 ml) frozen peas
- 2 cloves garlic, chopped
- Salt and pepper
- 6 slices of country bread, cut into 2cm x 2cm cubes
- 1 tbsp (15 ml) dried basil
- Salt and pepper from the mill to taste

Preparation
- Preheat oven to 400°F.
- In a skillet, heat 1 tbsp (15 ml) of oil and cook the beef and onion for 5 minutes.
- Add the tomatoes, peas and garlic, salt and pepper.
- Place the beef mixture in a rectangular ovenproof dish and set aside.
- In a large bowl, place the diced bread.
- Drizzle with olive oil, sprinkle with basil, salt and pepper to taste.
- Spread the croutons evenly over the beef.
- Bake for 15 minutes or until bread is golden brown.

Notes and tips
Add ½ cup (125 ml) crumbled cooked bacon to the croutons.
