Beef - vegetables - croutons

Simply combine ground beef, diced tomatoes and frozen peas, top with croutons and you have a dish that's ready in just a few minutes and is as tasty as you want!

  • Ingredients

    • 4 tbsp (60 ml) olive oil
    • 450 g (1 lb) lean ground beef
    • 1 small red onion, chopped
    • 1 large can diced tomatoes, drained
    • 1 cup (250 ml) frozen peas
    • 2 cloves garlic, chopped
    • Salt and pepper
    • 6 slices of country bread, cut into 2cm x 2cm cubes
    • 1 tbsp (15 ml) dried basil
    • Salt and pepper from the mill to taste
  • Preparation

    1. Preheat oven to 400°F.
    2. In a skillet, heat 1 tbsp (15 ml) of oil and cook the beef and onion for 5 minutes.
    3. Add the tomatoes, peas and garlic, salt and pepper.
    4. Place the beef mixture in a rectangular ovenproof dish and set aside.
    5. In a large bowl, place the diced bread.
    6. Drizzle with olive oil, sprinkle with basil, salt and pepper to taste.
    7. Spread the croutons evenly over the beef.
    8. Bake for 15 minutes or until bread is golden brown.

Notes and tips

Add ½ cup (125 ml) crumbled cooked bacon to the croutons.
