Giant Raisin Cookie
Ingredients
- 125 ml (½ cup) softened butter
- 180 ml (¾ cup) brown sugar
- 1 egg
- 250 ml (1 cup) all-purpose flour
- 250 ml (1 cup) rolled oats
- 5 ml (1 tsp) baking powder
- 1 ml (¼ tsp) baking soda
- 125 ml (½ cup) raisins
Preparation
- Preheat the oven to 375F.
- In a bowl, using an electric mixer, cream the butter and brown sugar, add the egg and mix well.
- In another bowl, combine the dry ingredients.
- Add the dry ingredients to the wet mixture and form a ball; add butter if needed.
- Place the ball on a cookie sheet and flatten into a ½-inch-thick disc.
- Bake on the top rack for 12 minutes or until the cookie is golden brown. Break to taste.

Replace raisins with dried blueberries.
