Chewy almond, yogurt and date bars

These soft bars made with whole wheat flour, spelt flakes, hemp seeds, almond butter, vanilla yogurt and dried dates are the perfect snack to satisfy those late afternoon cravings!

Freeze for three months.

  • Ingredients

    • 1½ cups whole wheat flour
    • 6 cups spelt flakes
    • ½ cup hemp seeds
    • 1 tbsp baking powder
    • 1 tsp baking soda
    • 1 cup almond butter
    • 1 cup brown sugar
    • 3 eggs
    • 1½ cups vanilla yogurt
    • 1½ cups chopped dried dates
  • Preparation

    1. Preheat oven to 375F.
    2. In a large bowl, mix together flour, flakes, seeds, baking powder and baking soda. Set aside.
    3. In another bowl, mix all the other ingredients.
    4. Feel free to mix by hand if it is too difficult with a spoon.
    5. Press the mixture into two square pans lined with parchment paper.
    6. Bake for 25 minutes or until golden brown.
    7. Allow to cool, unmold and cut into bars.
