Date Energy Bars

    Freeze for three months.

    • Ingredients

      • 1 1/2 cups whole wheat or all-purpose flour
      • 6 cups quick-cooking rolled oats
      • 1/2 cup flax seeds
      • 1 tbsp baking powder
      • 1 tsp baking soda
      • 1 cup peanut butter (or soy butter)
      • 1 cup sugar
      • 3 eggs
      • 1 1/2 applesauce
      • 1 1/2 cups fresh dates, pitted and chopped
    • Preparation

      1. Preheat oven to 375F.
      2. In a large bowl, mix together flour, oats, flax seeds, baking powder and baking soda. Set aside.
      3. In another bowl, mix together peanut butter, brown sugar, eggs and applesauce.
      4. Add the dry mixture to the wet mixture. Feel free to mix by hand if it's too difficult with a spoon.
      5. Add the dates and mix again.
      6. Press the mixture into two square pans lined with parchment paper.
      7. Bake for 25 minutes or until bars are golden brown.
      8. Allow to cool, unmold and cut into bars.
